me vs. jalapenos


Allen and I both love Chuy's. Well, in all actuality, he loves the burritos but I go for the Creamy Jalapeno Sauce.  I put it on everything. So, instead of going and getting some, I came up with the brilliant idea of making it myself. 

Here was my recipe:
  • 1 13; cups mayonnaise
  • 13; cup buttermilk
  • 13; cup chopped jalapeno
  • 13; cup cilantro leaf
  • 1 (1 ounce) packet dry ranch dressing mix
Puree until smooth.

Above: a picture of the infamous Chuy's Creamy Jalapeno Sauce. Next to it is mine. Yes it is green. Taste wise it does not taste like Chuy's but isn't bad. If you did not see my update earlier tonight I had a run in with the jalapenos which resulted in my nose being on fire. I have had a cold the past few days. So, with my nostrils being raw combined with my nose running cause me to rub my nose before washing my hands of the jalapeno juices. In the past month of being in our new home, I have learned many things in the kitchen through trial and error. Much error!


Update on Marley:  Today, She had been with us for 2 weeks. After Marley's 3 day fast, she finally decided it was time to eat the other day. But she was not happy with us today Every morning when I get up, I feed her and take her out before I leave for class. However, today we were both up. He thought I fed her, I thought he fed her and she was very upset. She growled at my brother and bit my moms finger all because she was hungry. Bad mommy and daddy hahaha.

6 months in


 Happy 6th month anniversary. I know some people think it is stupid to celebrate a month anniversary but 6 months is a lot. That's half a year! if you did not know that already hahaha. In the past 6 months our lives have been crazy. The lord has certainly blessed us in momentous ways.

AUGUST
  • Day 1: Wedding day

  •  Went on a cruise to the Bahamas and Key West
  
  • Came home to keep moving all of my stuff into my in-laws
SEPTEMBER
  • a week later classes started
OCTOBER
  • Helped to plan Expanding your Horizons conference @ MTSU
  • Midterms
  • Hoedown @ church
NOVEMBER
  • still trying to get through the semester
  • Found out we were pregnant
  • 4 Thanksgiving meals
  • baby went to see Mr. Steve (in heaven)
DECEMBER
  • Semester ended
  • Passed Biology 2 (finally)
  • 1st Christmas married
  • 4 Christmas dinners
  • Moved into new apartment 3 days after Christmas
 JANUARY
  • finished unpacking last boxes
  • new semester started
  • first  girls night in new apartment
  • got new neighbors
  • tried to hid from new neighbors
 FEBRUARY
  •  planning trip to DC for school
  • Got Marley
  • Celebrated 6 months together.
What are we doing now? Working and school. I go to Washington DC in March and May and then the Santa Clara University in July. The light is getting brighter at the end of the tunnel.

A weeks worth of dinner



A weeks worth of dinner is harder to do than it looks. Allen is working 2nd shift this week. 2pm until 10 pm. So, in order to save money and him going out to eat I came up with the brilliant idea of cooking lunch and dinner to stick in the fridge. Thus resulting in three hours of cooking. 

A weeks worth of dinner includes:
  • Pork roast, lima beans and rice.
  •  Crock pot chicken, steamed mixed veggies and Italian pasta salad     
  • (Allen's request) Barbeque chicken legs and Macaroni
  •  Spaghetti with Italian sausage and garlic bread (leftovers from tonight)

  •  Chicken, hummus and pita bread (no picture available)
  • Peanut butter and strawberry jelly sandwiches 
Yes, I cooked it all by myself. Here is a picture of Marley's first bath!

 Marley is a 3 years old female chihuahua. She was abused in her previous home so she is pretty shy and skittish now.  She would not get up from the couch to get a better video of her.

One month down



 Our first month here in our fabulous new home has been quite a journey. Not sure if it really feels like a month or longer. The Lord has truly blessed us this month. Actually this six months we have been married. YES! Six months. Before we moved, We were living with my in-laws (Allens' AMAZING grandparents). They were so good to us the 5 months we lived there.

Within the first month of living in our new home:
  • The dishwasher flooded (filled up with water anytime the sink was ran). Called maintenance man to fix said dishwasher.....TWICE. Got new dishwasher.
  • Heating coil went out in the stove. Discover this by cooking the chicken for an hour in the stove. 
  • Some girl friends came over for homemade pizza night. (heating element still bad)
  • Became friends with maintenance man and he replaced the heating element in the stove.
  • NEW dishwasher filled up with water and water pressure in shower turns to drizzle . Called maintenance man again. Three days later (water still in dishwasher and I have been washing my hair in sink) he drains it the NEW dishwasher and fiddles with shower.
This week we have not had to call the maintenance man! PRAISE the LORD!
